Yellow lentil stew
Heat ghee in a pot over medium heat. Add garam masala, turmeric, fennel seeds and cumin. Then, add chopped zucchinis. Saute for some minutes, then add soaked (soaked in boiled water for about 10 minutes) yellow lentils. Stir a couple of times then add water (add enough water to make it soupy), celery leaves and parsley. Add water, if necessary. At the end of cooking (about 15 minutes later) stir in baby spinach. Season with salt.
