Veggie rice soup
In a pot, bring 1/2 cup of basmati rice with plenty of water to a boil. 2 minutes later, strain it. I do this to reduce arsenic in rice.
Bring about 3 cups of water to a boil, add finely sliced carrots, chopped red bell peppers, onion slices, sliced zucchinis, chopped dill, chopped celery leaves and lemon peel. Cook for about 10 minutes. Then, add rice, little bit of olive oil, salt and vegetable broth powder (👩🍳 sugar free, yeast free and without flavour enhancer). Add more water, if needed. At the end of cooking stir in a squeeze of fresh lemon juice and chopped dill.
Transfer into a bowl and top with sunflower seeds.
