Veggie rice soup with oyster mushrooms

In a pot, bring 1/2 cup of basmati rice with plenty of water to a boil. 2 minutes later, strain it. I do this to reduce arsenic in rice.
Bring about 3 cups of water to a boil, add finely sliced carrots, chopped yellow bell peppers, sliced zucchinis, chopped celery root, celery leaves, parsley and lemon peel. Cook for about 10 minutes. Then, add rice, little bit of olive oil, salt and vegetable broth powder (👩‍🍳 sugar free, yeast free and without flavour enhancer). Add more water, if needed. As soon ad the rice softens stir in a squeeze of fresh lemon juice.
Transfer into a bowl and stir in sauted oyster mushrooms and pumpkin seeds.
