Veggie rice dish

Heat olive oil over low/medium heat and saute sliced mushrooms for 5 minutes or so. Then, stir in fresh peeled tomato cubes. Season with salt, herbed salt and herb de Provence. Cook for about 10 more minutes, then stir in sliced radishes and precooked basmati rice.
Served with lettuce, zucchini and broccoli.
Optional: sprinkle with little bit of grated parmesan, pecorino or vegan cheese (👩‍🍳 made of real whole food ingredients such as nuts & legumes and traditional dairy cultures. No fillers or starches).
