Vegan soba noodles
Roasted oyster mushrooms and zucchini slices (olive oil, salt, oregano//convection oven, upper part of the oven, 160 degrees)
Cashew sauce: In a blender, blend 1/2 cup of soaked cashews, 1 cup of water, 2 tablespoons of nutritional yeast, herb de Provence, little bit of garlic, salt and a squeeze of fresh lemon juice
In a skillet, over low/medium heat mix together precooked soba noodles (1 package), the cashew sauce, chopped coriander leaves and the roasted veggies
