Heat skillet over medium heat and fry sliced mushrooms until golden brown. Reduce heat, then add olive oil, precooked basmati rice/quinoa, chopped celery leaves and lettuce. A couple minutes later remove from heat and stir in little bit of miso paste, a small piece of ginger ginger and coriander. Season with salt and sprinkle with fresh lemon juice.
