Veal soup

Bring water to a boil and add grassfed veal (with bones) cutted into pieces. The meat should be covered with water. After a couple of minutes of cooking, strain it. Fill the pot with fresh water and bring it again to a boil. Add bay leaves, little bit of apple cider vinegar, salt, little bit of black pepper, parsley, sliced carrots and celery leaves. Simmer for about 2 hours until the meat is cooked through. Then take it out. Seperate the bones from the meat. Add the bones back to the pot and continue cooking for about 1 more hour. The longer you cook it the more nourishing it is. Pass the soup through a strainer. Bring the soup to a boil, again. Then add emmer orzo, parsley, celery leaves, finely sliced carrots and chopped mushrooms. Cook until the orzo is ready. Transfer into a bowl and top with grated turmeric and bite sized pieces of the veal
