Tomato rice dish

Heat olive oil over low/medium heat and saute grated zucchini for 1 minute or so. Add little bit of tomato puree. Season with oregano, salt and herbed salt. Next, add precooked basmati rice & quinoa. Mix well.
Transfer onto a plate and top with an egg* (heat olive oil over low/ medium heat and add an egg. With the lid on cook until ready). Drizzle with olive oil and sprinkle with oregano. Serve with a small salad or steamed veggies, if wished.
