Toasted savoury crepes

In a bowl, whisk 1 egg🥚 (👩‍🍳 prefer pasture-raised or organic eggs, they are higher in omega-3, Vitamin D, Vitamin A and Vitamin E) with 1 splash of water, 1 splash of milk (plantbased or goat’s milk), 1 teaspoon of ground flaxseeds and 2 heaping tablespoons of buckwheat flour.
Stir in half grated carrot🥕 and a small piece of melted butter🧈 (grassfed, if possible). The batter should not be too thick, add water if necessary.
Coat a crepe pan with a thin layer of butter and bake the crepes on both sides.
Let the crepes cool down then fill them with baby spinach, grassfed cheese, white beans (glass jar// rinsed with fresh water), salt, chopped parsley, chopped dill and little bit of black pepper.
Then toast them in a sandwich maker.
