Sweet potato cookies with blueberries
Preheat oven to 170 degrees (convection oven).
In a bowl, combine 1 cup of buckwheat flour, 1 cup of oats (gluten free, if wished), 2 tablespoons of coconut flour, 2 tablespoons of chia seeds, pure vanilla powder, 1/4 tablespoon of ground green stevia leaves, 4 tablespoons of date sugar, 1 mashed (medium size) sweet potato, 1/2 cup of ground pumpkin seeds, 3 tablespoons of coconut butter, grated orange peel, juice of 1 orange.
Next, add 2 handfuls of blueberries. Combine carefully!
Form cookies out of the dough and place them on a baking tray lined with parchment paper. Bake for about 20 minutes in the upper part of the oven.
