Heat olive oil over low/medium heat and saute minced onions, finely sliced eggplants and finely sliced red pepper. About 10 minutes later, add precooked green beans and finely sliced zucchinis. Next, stir in little bit of tomato paste and peeled tomato cubes. Season with salt, chopped basil and oregano. Cook for about 15 minutes. If necessary, add little bit of water.
Serve with millet-basmati rice and rocket tomato salad. Drizzle with olive oil and sprinkle with oregano.
