Soba noodles with fish and veggies
Heat olive oil over low/medium heat and slow fry whole fish (salted about 1 hour before cooking) on both sides. As soon as the fish is cooked through set aside. Add little bit more olive oil and saute sliced scallions, carrots and red pepper. About 5 minutes later add sliced zucchinis. Season with little bit of salt, cardamom, grated lemon peel and coriander.
Next, stir in precooked soba noodles, fish (bite sized pieces) tamari sauce and little bit of fresh lemon/lime juice.
Transfer into a bowl and top with chopped coriander leaves/parsley and little bit of fresh grated ginger.
