Scrambled eggs with veggies

Saute finely sliced carrots (I used a vegetable peeler) in olive oil until almost soften. Season with salt, tarragon and herbed salt. Stir in baby spinach and beaten eggs (organic/pasture-raised eggs)
Cook until ready, drizzle with olive oil, sprinkle with oregano then enjoy it!
