Scrambled eggs with veggies
Heat olive oil over low/medium heat. Then, add finely sliced green pepper, sliced scallions and sliced zucchinis. Season with salt and herbed salt. Cook for about 10 minutes, then add baby spinach and beaten eggs (organic/pasture-raised eggs).
Cook until ready then transfer it onto a plate. Top with avocado cream dip (combine: mashed avocado, little bit of miso paste, tiny bit of black pepper and little bit of fresh lemon juice).
Serve with toasted rye/millet/ spelt/… sourdough bread.
