Savoury oatmeal

Saute sliced oyster mushrooms over medium/high heat until golden brown, without oil. Season with salt and tarragon. Then add oats (gluten free, if wished) and water. Cook according to the package directions. Next, stir in lamb’s salad and chopped radicchio.
Transfer into a bowl and top with nutritional yeast, shelled hemp seeds and diced beetroot. Drizzle with olive oil and sprinkle with fresh lemon juice.
