Cook 1 portion of oats (gluten free, if wished) together with 1 grated carrot. Season with herbed salt (I use herbamare/ avogel_gr). At the end of cooking, stir in chopped coriander leaves, 1 tabelspoon of lentils, a squeeze of fresh lemon juice and 1/4 of avocado slices.
Transfer into a bowl and top with crushed walnuts and little bit of olive oil.
