Savoury beetroot pancakes
In a blender, blend 1 cup of oats (gluten free, if wished) together with 2 tablespoons of chia seeds.
Then, blend 1 beetroot together with little bit of water.
In a bowl, combine the content of the blender with 1 heaping tabelspoon of baking powder, 2 tablespoons of arrowroot powder, 2 tablespoons of oats, the blended beetroots, salt, little bit of black pepper, a squeeze of fresh lemon juice and 1 cup of water. Let the batter rest for about 15 minutes.
Heat olive oil in a skillet. Use a tablespoon to scoop the batter into the pan. Bake on both sides (low/medium heat).
Serve with a small salad. Drizzle with olive oil, sprinkle with fresh lemon juice 🍋, season with salt and tiny bit of black pepper.
