Sauted leafy greens topped with steamed eggs
In a pot, heat olive oil over low/ medium heat. Add little bit of minced garlic, spinach, chopped parsley and chopped beetroot greens. Saute for a couple of minutes, season with salt and herbed salt and then add tiny bit of water (if needed). With the lid on cook until the stalks soften. At the end of cooking stir in little bit of precooked millet & rice. Then, transfer it into a bowl and sprinkle with fresh lemon juice. Top with steamed eggs (👩🍳 prefer pasture-raised/organic eggs), drizzle with olive oil and season with oregano.
