Rice veggie bowl

Heat olive oil over low/medium heat and saute chopped scallions, chopped parsley, chopped celery, sliced carrots and sliced zucchinis. Season with salt and herbed salt. About 5 minutes later add basmati rice and water (1:2). Simmer for about 10 minutes.
Transfer into a bowl and top with crumbled feta cheese or vegan cheese (👩‍🍳made of real whole food ingredients such as nuts & legumes and traditional dairy cultures. No fillers or starches).
