Rice-millet bowl

Heat olive oil over low/medium heat and saute sliced scallions for a couple of minutes. Then add precooked basmati rice-millet and baby spinach. Season with salt, herbed salt and grated lemon peel. Transfer into a bowl and sprinkle with fresh lemon juice.
Toppings: nutritional yeast and pumpkin seeds.
