Heat olive oil over low/medium heat and saute chopped parsley, chopped dill and precooked whole grain basmati rice. Add lettuce (lollo rosso) roasted carrot sticks and zucchini slices. Season with salt.
Transfer into a bowl and top with grated parmesan, pecorino or vegan cheese.
