Quinoa patties (sweet/made with leftovers)
In a bowl, combine 1 cup of cooked quinoa, flaxegg:1 heaping tabelspoon of ground flaxseeds mixed with 6 tablespoons of water/ let rest for 5 minutes, 1 teaspoon of baking powder, 1 tabelspoon of tahini, 1 grated carrot, 6 tablespoons of buckwheat flour, 1/2 grated apple and 1 teaspoon of apple cider vinegar. Then, form patties out of the dough. Heat coconut oil in a skillet over low/medium heat. Slow fry patties on both sides until golden brown.
Served with tahini, sauted apple cubes, cardamom and raisins. Optional, add a little bit of raw honey or maple syrup.
