Quinoa bowl

In a skillet, heat olive oil over low/medium heat and saute sliced scallions and sliced mushrooms. As soon as they are cooked through add chopped parsley, chopped dill, precooked quinoa and rocket salad. Season with salt and sprinkle with fresh lemon juice. Transfer into a bowl and top with mashed avocado. Season with oregano and tiny bit of black pepper.
