Pumpkin veggie soup🍁🍂

Bring water to a boil and add diced potatoes🥔, diced sweet potatoes🍠, sliced carrots 🥕, pumpkin cubes, celery leaves, celery stalk, parsley, olive oil, turmeric, little bit of black pepper and salt. The veggies should be covered with water.
Simmer for about 40 minutes.Then, remove the celery & parsley and blend the soup with a hand blender.
Top with barley rusk, the cooked parsley & celery leaves/stalk and feta cheese or vegan feta. Season with oregano and drizzle with olive oil.
