Polenta bowl

Cook 1 grated carrot and 1 coarsely grated zucchini in water for a couple of minutes. Add vegetable broth powder (sugar free, yeast free and without flavour enhancer). Season with salt. Then, stir in polenta (about 3 parts of water to 1 part of polenta). Cook according to the package directions.
Serve with a small salad and grated parmesan, pecorino or vegan cheese (👩‍🍳 made of real whole food ingredients such as nuts & legumes and traditional dairy cultures. No fillers or starches). Sprinkle the oregano and drizzle with olive oil.
