Pasta dish

Heat olive oil over low/medium heat and saute sliced eggplants, sliced mushrooms and sliced carrots. Season with herbed salt and salt. About 10 minutes later, add little bit of tomato paste. Next, add peeled tomato cubes. Cook for about 10 more minutes, then stir in precooked spelt/quinoa/lentil… pasta.
Transfer into a bowl and sprinkle with rocket salad and parmesan/pecorino/vegan cheese. Drizzle with olive oil.
Side dish: boiled amaranth greens (salt, little bit of black pepper, fresh lemon juice and olive oil).
