Pancakes with carob and sweet potato

In a bowl, combine 2 flaxseed eggs (combine 6 tablespoons of water with 2 tablespoons of ground flaxseeds), 1 tabelspoon of baking powder, 2 tablespoons of carob powder, 2 tablespoons of tapioca starch, 3 tablespoons of millet flour, 3 tablespoons of whole grain rice flour, 1 cup of almond milk, 4 tablespoons of precooked mashed sweet potatoes and 1 teaspoon of apple cider vinegar. Let the batter rest for about 15 minutes. Heat coconut oil in a skillet. Use a tablespoon to scoop the batter into the pan. Slow fry on both sides until golden brown (low/medium heat).

Serve with seasonal fruits and tahini.
