Orange coconut cake
In a blender, blend 4 dried figs, 1 tabelspoon of chia seeds, 1/2 cup of shredded coconut, 1 peeled chopped apple and 300 ml of fresh orange juice.
In a bowl, combine the content of the blender, 1 cup of buckwheat flour, 1 cup of whole grain rice flour, 1/2 cup of tapioca starch, 2 heaping tablespoons of baking powder, 1 tabelspoon of apple cider vinegar, tiny bit of salt, 10 tablespoons of tahini, grated orange peel, cardamom, 1 cup of coconut flour, 1/2 cup of shredded coconut, 3 cups of water and 3/4 cup of coconut sugar. Mix, well.
Transfer and spread evenly into a round tray (28cm), lined with parchment paper. Press slightly down. Bake for about 35 minutes.
Let it cool down for a couple of minutes, then remove from the tray. Enjoy after it has cooled down completely.
