Lentils stew with polenta

Soak lentils for some hours in hot water. Then, strain them.
Bring water to a boil, then add lentils. Cook for about 10 minutes. Strain again.
Heat olive oil over low/medium heat. Saute sliced scallions, sliced leek, chopped celery leaves & stalk, sliced carrots🥕 and little bit of minced garlic. Season with salt, little bit of black pepper, oregano, bay leaves and cumin.
About 10 minutes later add lentils, tomato puree and water.
Bring to a boil and cook for about 40 minutes. Add water if necessary.

Served with herbed polenta
Heat olive oil over low/medium heat and saute sliced scallions and chopped parsley. A couple minutes later add water and bring it to a boil. Season with salt (👩‍🍳 Himalayan salt is a good option) and herb de Provence. Stir in polenta slowly! Cook polenta according to the package directions!
