Lentil stew with mashed cauliflower

Bring water to a boil, then add lentils. Cook for about 10 minutes then strain them.
Heat olive oil over low/medium heat. Saute minced onions, chopped celery leaves & stalk, chopped parsley and sliced carrots. Season with salt, garam masala, oregano, bay leaves and cumin.
About 10 minutes later add lentils, tomato puree and water.
Bring to a boil and cook for about 40 minutes. Add water if necessary.

Serve with mashed cauliflower.
Let it cool down slightly, then drizzle with olive oil and raw apple cider vinegar.
Sprinkle with oregano.
