Lentil spaghetti

Heat olive oil (πŸ‘©β€πŸ³ I always use more olive oil for eggplants) over low/medium heat and saute minced onions and chopped eggplants. About 5 minutes later add sliced mushrooms and little bit of minced garlic. Season with salt and herb de Provence. Continue cooking for 5 more minutes then add tomato puree, peeled diced tomatoes and tomato juice. Cook for about 20 minutes. Whenever needed add water.
At the end of cooking, stir in cooked (πŸ‘©β€πŸ³ I cooked the lentil spaghetti in vegetable broth) red lentil spaghetti.
Transfer onto a plate and top with rocket salad.
