Preheat oven to 160 degrees (convection oven).
In a blender, blend 1 cup of sultanas and 1 cup of mixed nuts.
In a bowl, combine 1 cup of buckwheat flour with the content of the blender, the juice of 3-4 mandarines, cardamom and grated mandarine peel. Transfer onto a tray (24*20cm) lined with parchment paper. Spread and press it evenly down. Top with sliced apples. Bake for about 25 minutes. Then let it cool down slightly.
With a brush spread raw honey on top.
