Fish soup

Bring water to a boil (not too much, slightly lower then the veggies & potatoes which you are going to add), then add minced onions, little bit of minced garlic, sliced carrots, celery stalks & leaves, parsley and bite sized pieces of potatoes. As soon as the potatoes are almost cooked through add whole fish (salted at least 1 hour before cooking) and chopped zucchinis. Reduce heat and simmer until the fish is cooked through.
In a small bowl, combine fresh lemon juice with olive oil. Mix well, then stir it into the soup. If needed, add more salt.
Transfer the soup into a bowl. Add fish fillet and season with oregano and little bit of black pepper.
