Cook yellow split peas in water for about 2 minutes. Then, strain them and set a side. Saute chopped onions, sliced carrots and tiny bit of garlic in olive oil over low/medium heat. Season with, salt, herbed salt, bay leaves and rosemary. A couple minutes later, add the yellow split peas, grated lemon peel and water. Cook for about 30 minutes. The water should be absorbed. If not strain it. Remove bay leaves and rosemary stalk. Transfer into a blender, add little bit of fresh lemon juice, olive oil and blend until smooth.

Topping: sliced red onions, mild green peppers (glass jar) and red sweet pepper powder.

Serve with toasted spelt/rye or gluten free sourdough bread and roasted/cooked veggies
