Veggie rice soup
Bring water to a boil and add chopped celery stalk & leaves, lemon peel, salt, vegetable broth powder (👩🍳 sugar free, yeast free and without flavour enhancer), chopped parsley, sliced carrots, sliced radishes and precooked (to reduce the arsenic in rice I cooked it for about 10 minutes in plenty of water and then strained it) whole grain basmati rice. Add little bit of olive oil.
Cook the soup for about 15 minutes, until the rice softens.
Stir in little bit of fresh lemon juice.
Transfer into a bowl and sprinkle with pumpkin seeds.
