Rice with salmon

In a skillet heat olive oil over low/medium heat. Add salmon fillet and with the lid on cook until done (low heat!). Take the salmon out and set aside. Then, add finely sliced scallions, precooked rice, leafy greens/mixed lettuce leaves, chickpeas (glass jar// rinsed with fresh water) and avocado cubes. Season with salt, sprinkle with fresh lemon juice and little bit of black pepper. Cook for a couple of minutes, then stir in diced salmon.
Transfer onto a plate and top with some mixed lettuce leaves.
