Preheat oven to 160 degrees (convection oven).
In a bowl, combine 2 1/2 cups of millet flour, 2 cups of buckwheat flour, 200g of ground almonds, 1/2 cup of bamboo fiber, 5 tabelspoons of maple syrup, juice of 6 tangerines, grated tangerine peel, 1 cup of tinned coconut milk (lot’s of the fat part), cardamom and 1 teaspoon of ground green stevia leaves. Knead to a firm dough. Dust the worktop with buckwheat flour and roll the dough out. Cut out with Christmas cookie cutters or make other shapes. Bake some of the cookies plain (Lay the cookies on baking paper on a baking tray and bake for about 12 minutes.) and brush them afterwards with melted chocolate (dark chocolate about 80%). The rest of the cookies brush on both sides with tangerine syrup (cook the juice of 1 tangerine with 1 tablespoons of maple syrup for a couple of minutes) and then bake them.
