Carrot goji berry cake
In a pot, simmer 3 chopped carrots and 2 tablespoons of goji berries in orange juice of 1 orange. If necessary add little bit of water. Let it cool down.
In a blender, blend 1 cup of soaked cashews, 1 tabelspoon of tapioca starch, pure vanilla powder, the content of the pot, 2 tablespoons of raw honey, little bit of water (if necessary) and cardamom.
In a blender, blend 1/2 cup of cashews, 1/2 cup of sunflower seeds, 3/4 cup of almonds, 3 tablespoons of chia seeds, 1/3 cup of goji berries and 3 pitted medjool dates.
Transfer into a bowl, add 2 tablespoons of raw honey and 2 tablespoons of almond milk. Mix well.
Transfer onto a round tray (26cm) lined with parchment paper. Spread and press it evenly down. Then spread the carrot cream on top. Sprinkle with cacao nibs. Place the tray in the frigde for a couple of hours then enjoy it!
