Briam Greek dish

Preheat oven to 160 degrees (convection oven).
Place finely sliced (peeled) potatoes🥔, finely sliced eggplants🍆, finely sliced zucchinis, minced garlic cloves🧄, finely sliced onions🧅, peeled chopped tomatoes🍅, plenty of olive oil, orange sliced bell peppers and finely chopped parsley in a baking tray.
Season with salt, rosemary, thyme, oregano and little bit of black pepper. Mix well.
Roast for about 50 minutes. Mix the veggies thoroughly, once or twice.
Serve🍴 with chopped parsley, oregano and (an) egg(s).
