Black rice red lentil dish
Cook black rice together with red lentils in water. After about 5 minutes I change the water, then I continue cooking until the rice softens.
In a skillet, heat olive oil over low/ medium heat. Add sliced scallions, chopped parsley, chopped celery leaves and chopped carrot greens. Season with salt, cumin and coriander. Sprinkle with fresh lemon juice.
Transfer into a bowl and serve with mixed lettuce leaves.
