Black rice bowl
In a skillet heat olive oil over low/ medium heat. Add plenty of baby spinach and saute for about 1 minute. Then add precooked black rice (👩🍳 I cooked it with vegetable broth powder// sugar free, yeast free and without flavour enhancer) and saute for another minute.
Transfer into a bowl and top with some avocado cubes and crushed walnuts. Sprinkle with little bit of fresh lemon juice and season with salt and tiny bit of black pepper.
If wished, serve with egg(s), fish, legumes…
