Beetroot cookies

Preheat oven to 160 degrees (convection oven).
In a bowl, combine 2 cups of oats (gluten free, if wished), 2 tablespoons of chia seeds, 5 tablespoons of desiccated coconut, 2-3 tablespoons of beetroot powder, 1/2 teaspoon of ground green stevia leaves, 1 tabelspoon of collagen powder, 2 tablespoons of tapioca starch, 1 cup of almond milk, 2 tablespoons of tahini and 2 tablespoons of melted coconut oil. Mix, well.
Form cookies out of the dough and place them on a baking tray lined with parchment paper. Bake for 10 minutes in the upper part of the oven then spread with beetroot tahini cream (In a cup, combine 3 tablespoons of beetroot powder, 1/2 teaspoon of ground green stevia leaves, 2 tablespoons of tahini, a splash of almond milk) and sprinkle with desiccated coconut.
