Banana blueberry pancakes

In a bowl, combine 1 tabelspoon of ground flaxseeds, 3 tablespoons of tapioca starch, 8 tablespoons of buckwheat flour, 1 tabelspoon of baking powder, about 1/2 cup of water, 1/2 mashed banana, a squeeze of fresh lemon juice, cardamom and 1 tabelspoon of melted coconut oil. Then, stir in 1 handful of blueberries. Let the batter rest for about 15 minutes.
Heat coconut oil in a skillet. Use a tablespoon to scoop the batter into the pan. Slow fry on both sides until golden brown (low/medium heat).

Serve with blueberries, slow fried banana slices, tahini and blackstrap molasses.
