Amaranth veggie soup

Roast amaranth for about 1 minute, then add water. Bring to a boil and cook for about 2 minutes. Then strain it. Continue cooking with fresh water, chopped parsley, chopped celery leaves and stalk, sliced carrots and little bit of sliced scallions. Add vegetable broth (sugar free, yeast free and without flavour enhancer), olive oil and salt. Cook for about 40 minutes. At the end of cooking stir in some grated ginger.
Transfer into a bowl and top with crumbled feta cheese or vegan feta cheese (👩‍🍳 made of real whole food ingredients such as nuts & legumes and traditional dairy cultures. No fillers or starches).
