Cook amaranth in water for a couple of minutes then strain it. Continue cooking with fresh water according to the package directions. Stir in little bit of ground green stevia leaves.
Transfer into a bowl and top with (ripe) chopped apricots, crushed walnuts, a splash of tinned coconut milk, tahini and carob powder.
